For the past 20 years, Fredy has been on a mission - driven by a deep
passion for specialty coffee. Inspired by the legacy of his father and
grandfather, his journey began with seeds, shared by a friend. From there, he
delved into the world o f coffee processing, varieties, and cupping, always
eager to improve.
Alongside his wife and daughters, he works every day to maintain high quality
and ensure traceability on their farm, nestled among volcanoes and rich
biodiversity. His natural process coffee was born from experimentation and
collaborative trials with other producers, leading t o consistently better results.
The process begins with the careful selection of only ripe cherries, followed by
4 8 hours of fermentation in bags, and then drying on raised African beds for
20 to 25 days.
His wife and daughters are i n charge of verifying both the physical and
sensory quality of the coffee. Looking ahead, Fredy plans to expand with
more exotic varieties. Above all, he wants coffee drinkers to know that every
cup is grown with love and care - and he hopes that each person feels peace
and trust in its quality, just as he feels joy in producing it.
